Sweet Potatoes with Maple-Pecan Sauce

Yield: 4 servings

Ingredients:

  • 2 pounds of sweet potatoes
  • 4 tablespoons of unsalted butter
  • 1/2 teaspoon salt
  • For the maple pecan sauce:
  • 1/2 cup maple syrup
  • 1/2 cup chopped pecans

Directions:

  1. Preheat oven to 425° F.
  2. Peel and slice the sweet potatoes into 1" thick slices.
  3. Melt the butter and add to potatoes.
  4. Salt.
  5. Toss to coat, and spread in pan in a single layer, not touching.
  6. Roast for 40 minutes, turning.

Maple Pecan Sauce:

  1. Bring the maple syrup to a boil in a small sauce pan.
  2. Add the pecans.
  3. Wait for the sauce to come back to a boil, cook for 1 minute.
  4. Pour the sauce over the sweet potatoes and serve.
